yes, lower the heat a notch down from what you normally use. Teflon is toxic stuff.
I believe the trick is to get the pan hot BEFORE you put the oil or butter in. Pam should work, but it browns right away in a hot pan. Use a little butter or veg/canola oil for eggs. Butter has the best flavor. Swirl around and then pour the eggs in.
Omelette’s can be tuff with stainless. Pam won’t do the trick. you have to make sure the butter or oil coat not only the bottom of the pan, but the sides too. Second, the oil must be hot, almost smoking, then swirl the pan well (this will cool it down a little so you eggs don’t burn too). Once you get your eggs in a “hot” pan, you can turn it down a bit.
From what I understand, Teflon is very bad for you. Even if you use plastic or silicone to not scratch the bottom, over time the toxins will still leach into your food.
Give yourself a little time and practice and you will be able to use your stainless cookware like a pro!
I know… I have the same problem.. I hate the stainless.
But the Teflon is only bad for you if it comes off the pan… so get a good one and don’t use metal in it. If it starts to flake off toss it.
use 10-40 weight… mobil or quakerstate is good..
