I have learned (and observed) that most hard anodized cookwares have a layer of non-stick coating, in most cases Teflon. Since hard anodized surface is supposed to be naturally non-stick, WHY would the manufacturers add this coating (which can be harmful to health)? It’s very hard to find real hard anodized cookware without additional non-stick coating.

I am looking to replace my current cookware with something that is much safer. I have read many articles where Teflon/non-stick surfaces are dangerous to our health. If I get a stainless steel cookware set with non-stick surfaces, will I encounter the same health risk?

I want to avoid the risk that Telfon poses to human health, so I refuse to use nonstick pans for my cooking. However, my stainless steel pans don’t work so well when I make things like eggs and pancakes. I usually end up with a sticky mess, even if I add a lot of oil/butter. Any types of cookware you recommend?
