I want to avoid the risk that Telfon poses to human health, so I refuse to use nonstick pans for my cooking. However, my stainless steel pans don’t work so well when I make things like eggs and pancakes. I usually end up with a sticky mess, even if I add a lot of oil/butter. Any types of cookware you recommend?

I burned a teflon pan not to the point of seeing smoke but where it was hot enough to boil the water to nothing and a small amout of residue (white) was left!!!! and a strange smell coming from the pan? Is the 15 dangerous toxic chemicals that are emitted from the pan that I burnt enough to be concerned or did I have to see smoke to suggest the release of chemicals??

Teflon, also known polytetrafluoroethylene (PTFE) itself is relatively inert.
If heated hot enough, though(several hundred degrees), it can decompose and give off some potentially nasty and unhealthy gases. I don’t know right off the top of my head what these would be, but I know that certain species of pet birds are especially sensitive to them.
This hazard can generally be avoided, though, by not heating teflon cookware when empty.
